The ESC has A B C marked on it but none of the documentation mentions A B C. What color wires (motor) connect to the ESC.
A  red
B   black
C  yellow

Huh??

Doesn't matter.  If the motor spins backwards, reverse any two wires and you should be golden.

 i bought a new 30amp exceed rc, volcano series ESC. I do not have an ESC program card and would like to know if i need a program card to use my the ESC. Its for a 2.4ghz Esky belt cp v2. (originally a 25amp esky ESC installed)

You don't have to have a program card, but it helps.

What is the voltage output of the BEC of the 30A Volcano ESC?  I think it is of the LINEAR type - is that correct?  If I wanted to add a STEP 5v BEC, is that possible?  Can anyone recommend one and how would it be connected?

Is it possible to reprogram the Volcano 30A ESC with linear BEC so that the output of the low voltage is 6v instead of the 5v-2A that it comes set at?

Nope. It's not switchable.
If you want to run 6V, I would get the "OPTO" 40A. http://www.hobbypartz.com/vose40aopbre.html
Then add a switchable UBEC.
